INGREDIENTS:  

  • 3 large chicken breasts 
  • Salt and pepper
  • 2 Tbsp avocado oil
  • French bread 
  • Garlic 2 cloves 

DRESSING: 

  • Greek yogurt 1/3 cup 
  • Mayonnaise  1/3 cup 
  • Parmesan 3 Tbsp 
  • Garlic 2 cloves 
  • Lemon juice 1 tbsp
  • Worcestershire sauce 1 tbsp 
  • Dijon mustard 2 tsp
  • Anchovy paste 2 tsp
  • Avocado oil 1sp 
  • Salt and pepper ½ tsp 

You will also be needing the following measuring tools : 

  • ½ tsp
  • 1 tsp
  • 1 tbsp
  • 1/3 cup 

METHOD: 

  •  Firstly Preheat the oven to 375F and line the baking sheet with parchment paper.
  • Secondly, heat 2 tbsp avocado oil In a cast iron skillet 
  • Then Season the chicken with salt and pepper on both sides.
  • Thirdly Cook the in skillet until it is completely cooked, flip it halfway. When the internal temp reaches 165F take it off. 
  •  Mix bread cubes in a bowl with avocado oil, garlic, salt, and pepper meanwhile. 
  •  Next, pour it into a parchment baking sheet and bake for about  12-15 minutes or till golden brown, tossing halfway through.
  • After that take a bowl and whisk all of the dressing ingredients together to make a perfect dressing. Also, taste and adjust to needs of seasoning. 
  • Then prepare the salad by adding lettuce into the bowl and tossing it with 2/3 of the dressing.
  • Add croutons, sliced chicken,  parmesan cheese, and remaining dressing on the top.
